What's For Dinner Wednesdays

It's "What's For Dinner Wednesdays" time again. And I'm terribly unprepared.

Actually, I'm way too tired to take photos of dinner, and then sit down to write a post about it. Hell, I'm way too tired to even cook dinner tonight. Fish and chips anyone?

So instead you now get "What's for Lunch Wednesday". Hmmm...... doesn't roll off the tongue as well though, does it?

Anyway, with the heat we've had recently and will continue to have for goodness how long, (tomorrow is to be 36 degrees celsius again, oh my!) and the fact that I'm not getting enough sleep, I thought that was more than enough cause to indulge myself with my lunch choices.




Brie and crackers, some delicious seedless grapes and a big glass of ice cold water.

Oh, and a chick-lit novel to indulge in also.

To sit down to this, whilst Charlie is fast asleep in his cot for an hour or two, to read and eat uninterrupted is just sheer bliss for me. I could do this every day. Mind you, my waist line won't be so happy if I eat half a wheel of brie everyday.

But other than that - it's pure heaven.

I know, I really need to get a life.

But until such time as I have energy and enough free time to actually get a life, this will have to do. It could be worse. I could have to settle for cheddar instead.

What's For Dinner Wednesdays

Dinner is much more of a challenge when you have teenage boys in the house.

It usually starts about 10.30 in the morning...

"Mum, what's for dinner tonight?".

I mean, wow, they've only just had breakfast, it's still around 8 hours till dinner time, but they have to check that you haven't by some remote chance forgotten about dinner.

As if I ever could.

Any guesses as to what I'm making with the following ingredients?



Yes? No?

Ok. Is this a bit more of a clue?



That's right!

Homemade hamburgers.

Definitely a favourite around here. They have been lovingly nicknamed: 'Big Mama's Burgers'.

Hmmm..... is that a compliment?


(This is a big person's size burger. Look at the first photo again and you'll see a little round mini size patty about to be flattened and cooked especially for Charlie!)

The fact that they're requested again and again tells me that they must taste good.

I use beef mince and add in egg, breadcrumbs and what ever takes my fancy at the time. A variation much loved by Corey, is the Chicken Burger, with crumbed chicken replacing the beef patty.

I suppose you've all guessed by now that I'm not what you would call a 'method cook'.

More like a throw it all together and hope for the best type of cook.

Thankfully, I can usually pull it off.



Well, Kaiden seems to be enjoying his burger.



And we have the thumbs up approval from Corey.

So, another successful dinner made.

Only 16 hours till the pressures on, and the questions start again.

"What's for dinner, mum?........"

What's For Dinner Wednesdays

I'm thinking of starting a new themed day, along the lines of Fashionable and Fabulous Fridays, which seem to be popular.

So what does everyone think of 'What's For Dinner Wednesdays'?

I, like a lot of other mums I know, get stuck into the routine of making the same meals over and over again, due to lack of time, planning and ideas. So if we can share some ideas of quick and easy family meals, surely it will add a little inspiration to our cooking lives? Yes?

So, let's kick start this with Risotto. Easy Peasy.

Nothing is more homely to me than a delicious risotto made with love and care.

Everyone in this house loves risotto, so much so that I make a ton of it at once and we have it for lunch and dinner the next day and then freeze the rest.

The little bowl at the front is for Charlie and the other four huge servings are to satisfy the ravenous horde that live here.




Here we have a very basic Chicken Risotto, very simple yet oh so yummy.

Healthy too, which is always a bonus!

I don't follow a recipe as such, and often vary between ingredients such as chicken, mushrooms, onion, basically whatever takes my fancy at the time.



I serve my risotto with cold sugar snap peas on top.

The contrast between the hot and creamy risotto and the nice cold crunchiness of the peas is just divine. You just have to try it!
